Spiced Nashi

Spiced Nashi

Beautiful spiced richly flavoured side.

Ingredients

  • 6 Nashi
  • 8-10 whole cloves
  • 1-1.5 c brown sugar
  • ginger root
  • 1 c water
  • pinch salt
  • half cup vinegar
  • 1-2 Tbsp curry powder
  • 1 stick cinnamon
  • 1 grated onion

Nashi and kiwifruit salsa (Peter Gordon)

Good with grilled salmon, then use the leftovers on a ham sandwich. Serves 4 as an accompaniment

Ingredients

  • 1 Nashi, cored and diced
  • 3 kiwifruit, peeled and diced
  • 1 medium red onion, peeled and finely sliced
  • 6 chives, finely sliced
  • 1 lime, finely grated zest and juice
  • 6 basil leaves, finely sliced
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt plus a few good grinds black pepper
